Chilli Halloumi Skewers

Halloumi has never tasted so good.
Ingredients
- 300g halloumi cheese
- 1 tbsp tamarind paste
- 2 tbsps soy sauce
- 60ml sesame oil
- 1 garlic clove, crushed
- zest and juice 2 limes
- 1 small red chilli, finely chopped
- 1 tbsp brown sugar
- wooden skewers
Method
Step 1
Soak some wooden skewers in water for about 15 minutes so that they don’t burn when on the braai.
Step 2
Slice the halloumi long ways into thick fingers.
Step 3
Whisk the tamarind with 2 tbsps boiling water. Once dissolved, whisk together with the soy sauce, sesame oil, garlic, lime zest and juice, chilli and brown sugar. Keep whisking until the sugar has dissolved, then season to taste.
Step 4
In a large bowl, toss together the halloumi and marinade. Allow to marinate for at least 1 hour.
Step 5
Once marinated, then insert the skewer lengthways through the cheese. Drizzle with a little of the remaining marinade. Place straight onto the braai for 5 minutes before turning and colouring the other side.
