- 450g prawns, shelled and de-veined
- 1⁄4 cup lime juice
- 1 limes, sliced
- 1 tbsp lime zest
- 1 tbsp oil
- 2 tbsps coriander, chopped
- 1⁄2 red chilli, chopped
- 1 clove garlic, finely chopped
- salt and freshly ground pepper to taste
Mix together the lime juice, zest, oil, coriander, chilli, garlic, salt and pepper. Marinate the prawns in the mixture for 30 minutes.
Skewer the prawns and lime slices alternately and grill over medium-high heat until cooked, about 2-3 minutes per side.
