Chocolate Brownies

  • 110g butter
  • 110g chocolate, milk or dark
  • 225g caster sugar
  • 2 eggs, beaten
  • 110g plain flour, sifted
  • 1⁄2 tsp baking powder
  • 110g mixed nuts, chopped (such as brazils, pecans, cashews and macadamias)
  • pinch of salt


Step 1

Grease a 18cm by 30cm shallow tray, and preheat the oven to 180°C.

Step 2

Break up the chocolate into a bowl and add the butter, melting over a pot of gently simmering water.

Step 3

Once melted, take off the heat and mix in the remaining ingredients.

Step 4

Pour into the tray and bake in the oven for half an hour.

Step 5

Leave to cool before cutting into squares.
