This delicious and moist chocolate cake is simple and easy-to-follow.
Ingredients
- Cake:
- 250g butter, cubed
- 250ml water
- 2 tablespoons cocoa powder
- 500g Self Raising Flour
- 450g castor sugar
- 1⁄2 teaspoon salt
- 125ml buttermilk
- 1 teaspoon vanilla essence
- 2 eggs, lightly beaten
- Icing:
- 3 tablespoons butter
- 2 tablespoons cocoa powder
- 500g icing sugar
- 1 teaspoon vanilla essence
- 4 tablespoons milk
Method
Step 1
Cake: In a saucepan, gently bring butter, water and cocoa powder to a boil. Cool slightly.
Step 2
In a bowl, combine self raising flour, castor sugar and salt. Add cooled cocoa mixture and mix well.
Step 3
Add buttermilk and vanilla essence and mix well. Beat in eggs.
Step 4
Pour into 2 x 20cm round greased cake tins and bake at 180°C for 25 minutes or until a skewer comes out clean. Cool on a wire rack.
Step 5
Icing: In a saucepan over medium heat, melt butter and cocoa powder until smooth. Remove from heat.
Step 6
Combine icing sugar and vanilla essence. Add cocoa mixture and milk and stir until smooth.
Step 7
Spread icing between the two layers, on top and sides of the cakes.
Step 8
Tip: To make buttermilk: Mix 1 tablespoon of white vinegar or lemon juice in 250ml milk. Let stand for 5 minutes.
