Chocolate Ferrero Rocher Nutella Cake with Hazelnuts2015-10-22

Chocolate Nutella layer cake infused with hazelnuts and crushed wafers.
- FOR THE CAKE:
- 7 eggs, room temp
- 1/2 cup granulated sugar
- 2 cups hazelnuts, finely ground
- 3 tbsp all purpose flour
- 3 tbsp cocoa powder
- 3 tsp baking powder
- FOR THE FROSTING:
- 300g unsalted butter, room temp
- 2 tsp vanilla extract
- 2 1/4 cups chopped chocolate or chocolate chips
- 1/2 cup Nutella
- 1 1/2 cup wafer cookies, crushed (added on top of the frosting for each layer)
- FOR DECORATING:
- 10 Ferrero Rocher Chocolates
- 3/4 cups chopped hazelnuts or 3/4 cups crushed wafers (you choose)
TO MAKE THE CAKE: Preheat oven to 350°C and prep two 8inch round pans by lining with foil and spraying with baking spray.
In a large mixing bowl, sift together the flour, cocoa, and baking powder. Mix in the ground nuts and set aside.
In a separate mixing bowl using an electric mixer on high, whip eggs and slowly whip in sugar for about 5 mins (until tripled in size).
Slowly mix in the dry ingredients into the eggs and then divide the batter evenly between the two pans. Bake for about 25 mins, remove from oven and allow to cool for 5 mins before transferring to a cooling rack.
FOR THE FROSTING: In the microwave at low heat, melt the chocolate in a microwave safe bowl. Stop every few seconds and stir to prevent the chocolate from burning. Remove and allow to slightly cool to room temperature.
Transfer chocolate to a mixing bowl and whip together with butter, Nutella, and vanilla until combined.
TO ASSEMBLE: Make sure the cake is cool and split each cake into 2 even layers. Place the wafer cookies in a ziplock bag and crush them with a rolling pin. Reserve 2/4 cup of the wafers to decorate.
Take a small scoop of frosting and place it on the serving platter and put 1 layer of cake on top. Scoop another 1/4 of the frosting and spread it onto the cake layer and then sprinkle with 1/3 cup of the crushed wafers. Repeat for the remaining layers.
TO DECORATE THE CAKE: Cover the whole cake and sides with frosting and reserve some to pipe 8 stars on top of the cake. Press the crushed wafers or hazelnuts onto the sides of the cake and place 1 Ferrero Rocher chocolate in the piped stars.
