Chocolate Pecan Brownies

  • 150g cocoa powder
  • 1⁄2 tsp bicarbonate of soda
  • 160g butter, melted, divided
  • 25ml boiling water
  • 500g sugar
  • 2 eggs
  • 330g plain flour
  • 1 tsp vanilla essence
  • 1⁄4 tsp salt
  • 125g pecans, coarsely chopped
  • 340g chocolate chips
  • raspberries, to serve


Step 1

Preheat oven to 180°C. In a large bowl, combine the cocoa and bicarbonate of soda; blend in half of the melted butter.

Step 2

Add boiling water; stir until well blended. Stir in sugar, eggs and remaining butter. Add flour, vanilla and salt. Stir in pecans and chocolate chips.

Step 3

Pour into a greased 33 x 22cm baking pan. Bake for 35-40 minutes or until brownies begin to pull away from sides of pan. Cool and serve with fresh raspberries.
