Christmas Bundt Cake

This is a quick and easy cake! Great for when you have guests over for the holidays.
Ingredients
- 225g cream cheese, softened
- 1 cup butter, softened
- 11⁄2 cups white sugar
- 4 eggs
- 11⁄2 tsps vanilla essence
- 21⁄4 cups cake flour, divided
- 11⁄2 tsps baking powder
- 1 cup chopped pecans
- 11⁄2 cups glacé cherries
- GLAZE:
- 11⁄2 cups icing sugar
- 3 to 4 tbsps milk
- 1⁄2 tsp vanilla essence
- Pinch of salt
- Additional glacé cherries for garnish
Method
Step 1
In a bowl, beat the cream cheese, butter and sugar until fluffy. Add the eggs, one at a time, beating well after each one. Add the vanilla. Combine 2 cups of the flour and baking powder then gradually beat into the batter.
Step 2
Combine the pecans, cherries and remaining flour and fold into the batter. Pour into a greased and floured 25 cm fluted tube pan.
Step 3
Bake at 160°C for 1 hour or until a toothpick inserted comes out clean. Cool for 10 minutes then remove from the pan to a wire rack to cool completely.
Step 4
For the glaze, combine the icing sugar, milk, vanilla and salt, then drizzle over the cake. Garnish with remaining cherries.
