Ingredients
- 230g butter, room temperature
- 600g plain flour
- 500ml boiling water
- 4 tbsps bicarbonate of soda
- 4 tsps ground ginger
- 3 tsps ground cinnamon
- 1 tsp ground cloves
- 1 tsp ground nutmeg
- 1 tsp salt
- 4 tsps baking powder
- 270g brown sugar
- 680g molasses
- 2 tbsps freshly grated ginger
- 4 large eggs, lightly beaten
- Royal Icing:
- 340g icing sugar
- 2 egg whites
- 1 tsp lemon juice
Method
Step 1
Heat oven to 180°C. Butter and flour two 22 x 33cm cake pans; set aside.
Step 2
In a bowl, combine the boiling water and bicarbonate of soda; set aside. In a large bowl, sift together flour, ground spices, salt, and baking powder; set aside.
Step 3
In an electric mixer with the paddle attachment, cream the butter until light. Beat in the brown sugar until fluffy. Beat in the molasses and grated ginger, bicarbonate of soda mixture, and flour mixture. Beat in the eggs.
Step 4
Pour batter evenly into prepared pans; bake in the oven until a toothpick inserted in centre comes out clean, 30 to 35 minutes. Let cool on a wire rack.
Step 5
Cut out the star templates of different sizes and lay them out on the cake. Use a sharp, non-serrated knife to carefully cut along the outline of each star.
Step 6
Lightly whisk the egg whites and lemon juice together in a bowl. Gradually add the icing sugar, whisking until smooth and combined. Decorate each star as desired. Layer the stars onto of each other to create a tree.
