These are a delight to make. Roll out and cut to your heart’s content. Perfect them by decorating with icing and mini sweets. These are great as a festive gift too: packaged in jars with ribbon. Children will love making their own creations on top, and they are also great made into Christmas Tree or Window ornaments!
Ingredients
- 2 cup(s) all-purpose flour, plus more for rolling
- 1/2 teaspoon(s) baking powder
- 1/4 teaspoon(s) salt
- 1/2 teaspoon(s) ground cinnamon
- 8 tablespoon(s) butter, softened
- 1 cup(s) sugar
- 1 large egg
- 1 teaspoon(s) vanilla extract
- decorating sugar and candies
- icing sugar, for decorating(optional)
Method
Step 1
Make the dough: In a large bowl, whisk together flour, baking powder, salt, and cinnamon. Set aside.
Step 2
In another large bowl, using an electric mixer, beat butter and granulated sugar until light and fluffy. Beat in egg and vanilla. With mixer on low speed, gradually add flour mixture; beat until combined.
Step 3
Divide dough in half; form into two 3/4-inch-thick disks. Wrap each in plastic; refrigerate until firm, at least 1 hour.
Step 4
Cut out shapes with cookie cutters; if dough gets soft, chill 10 minutes. Using a metal spatula with a thin blade, transfer cut-out shapes to a parchment-lined baking sheet. Re-roll scraps; cut more shapes.
Step 5
Place baking sheet in freezer; once frozen, transfer shapes to a resealable plastic bag. Freeze up to 1 month.
Step 6
To Bake: Preheat oven to 200. Line baking sheets with parchment; bake, decorating if desired until edges are golden, 10 to 15 minutes. Cool cookies for 1 minute on sheets, and transfer to wire racks to cool completely.
