Ingredients
- For the dough
- 300g brown flour, divided
- 200g plain white flour
- 10g dry yeast
- 190ml warm low fat milk
- 60ml warm water
- 60 butter, softened
- 85g honey
- 1⁄2 tsp salt
- 11⁄2 tsps fresh lemon juice
- 1 egg
- 1 egg white
- 50g castor sugar
- 11⁄2 tbsps ground cinnamon
- 1g ground nutmeg
- For the glaze
- 100g icing sugar, sifted
- 1 tsp vanilla essence
- 5 tsps low fat milk
Method
Step 1
To prepare dough, dissolve the yeast in warm milk and warm water in a large bowl; let stand 5 minutes or until foamy. Add the butter and the honey, salt, lemon juice, egg and egg white; stir well. Add the brown flour and plain white flour, stirring until a soft dough forms. Turn dough out onto a floured surface.
Step 2
Knead until smooth and elastic, about 8 minutes. Add a little more plain white flour, 1 tablespoon at a time, to prevent dough from sticking to hands. Place the dough in a large bowl coated with cooking spray, turning to coat top. Cover and let rise in a warm draught-free place, for 1 hour or until doubled in size.
Step 3
Punch the dough down; roll into a 40 x 30cm rectangle on a floured surface. Coat surface of dough with cooking spray.
Step 4
For the filling; combine the castor sugar, cinnamon, and nutmeg; sprinkle over dough, leaving a 11⁄2cm border. Roll up the rectangle tightly, starting with a long edge, pressing firmly to eliminate air pockets; pinch seam to seal. Cut the dough into 16 rolls. Place the rolls, cut sides up, in a 30 x 20cm baking sheet coated with cooking spray. Cover and let rise 45 minutes or until doubled in size.
Step 5
Preheat oven to 180°C. Uncover the rolls. Bake for 22 minutes or until lightly browned. Cool in pan on a wire rack.
Step 6
For the glaze; place the icing sugar and vanilla in a small bowl. Add 5 teaspoons low fat milk, 1 teaspoon at a time, stirring to form a thick glaze.
Step 7
Drizzle glaze evenly over rolls. Serve warm.
