Coffee Chocolate Brownies2016-01-29

Moist, rich and delicious! These brownies go perfectly with a cup of tea.
- 2⁄3 cup cocoa powder
- 11⁄2 cups sugar
- 1⁄2 cup icing sugar
- 3⁄4 tsp salt
- 1 cup plain flour
- 2 tsps instant coffee (for more coffee flavour, double this amount)
- 1 cup chocolate chips
- 1⁄3 cup plain yoghurt
- 3 eggs, room temperature
- 1⁄3 cup vegetable oil
- 2 tsps vanilla essence
- 2 tbsps brewed coffee, slightly cooled
Preheat oven to 180°C. In a large bowl, combine cocoa, sugars, salt, flour, instant coffee and chocolate chips. Add in yoghurt, eggs, vegetable oil, vanilla essence and coffee. Stir until just combined, do not over mix.
Scoop batter into an 22 x 22 cm pan that has been lightly sprayed with cooking spray.
Bake for approximately 35 minutes. To check if they are done, place a knife or toothpick into the centre. When you pull it out, it should still be a little moist but starting to bake up.
Remove from oven and allow to cool in pan for at least 30 minutes.
