Delicious, moist coffee cupcakes! Perfect as a light snack and perfect with a cup of coffee!
Ingredients
- 1 tbsp instant coffee
- 3⁄4 cup hot full-cream milk
- 3 eggs
- 3⁄4 cup canola oil
- 2 tsp Cinnamon spice
- 1 x 600g Vanilla Cake Mix
- BUTTER ICING
- 1 x 250g Vanilla Icing Kit
- 1⁄2 cup butter
- 2 tsp instant coffee
- 4 tbsp warm water
Method
Step 1
Adjust oven rack to the middle position. Preheat oven to 180°C. Line 12 holes in muffin tins with cupcake liners.
Step 2
Dissolve coffee granules in hot milk and leave to cool a little.
Step 3
Beat eggs and oil for 2 minutes on high speed until well blended. Add milk with coffee and beat for 1 minute on high speed.
Step 4
Add Cinnamon spice to Vanilla Cake Mix. Add to egg mixture. Fold in gently by hand until combined.
Step 5
Divide the mixture between the muffin tins. Bake for about 35-40 minutes. The cupcakes will be cooked when a skewer inserted comes out clean. Cool cupcakes for 10 minutes and lay out on cool- ing rack. Don’t ice cupcakes until completely cool.
Step 6
For the icing, mix according to package instructions. Use a piping bag to pipe icing over each cupcake. Garnish with dark chocolate gratings.
