Ingredients
- 6 chicken thigh fillets (660g), halved
- Coriander chilli sauce
- 8 green onions, chopped coarsely
- 2 teaspoons bottled crushed garlic
- 1 teaspoon bottled chopped red chilli
- 1⁄4 cup loosely packed fresh coriander
- 1 teaspoon sugar
- 1 table spoon fish sauce
- 1⁄4 cup (60ml) lime juice
- Chickpea salad
- 2 x 300g cans chickpeas, rinsed, drained
- 2 medium egg tomatoes (150g), chopped coarsely
- 2 green onions, chopped finely
- 2 tablespoons lime juice
- 1 cup chopped fresh coriander
- 1 tablespoon olive oil
Method
Step 1
Coriander chilli sauce: Blend or process onion, garlic, chilli, coriander and sugar until finely chopped. Add fish sauce and lemon juice; blend until well combined. Chickpea salad Combine ingredients in large bowl; toss to combine
Step 2
Cook chicken, in batches on heated oil grill plate (or grill or barbecue) until almost cooked through. Brush about two-thirds of the coriander chilli sauce all over the chicken; cook further 5 minutes or until chicken is cooked through.
Step 3
Serve chicken, sprinkled with remaining coriander chilli sauce, with chickpea salad.
