- 1 kg chicken thighs
- juice and zest of four limes
- 1 cup chopped fresh coriander
- 1⁄2 cup olive oil
- 2 tbsps honey
- 1 tbsp cumin
- salt and pepper
To the bowl of a food processor, add juice and zest of four limes, 1 cup chopped fresh coriander, 1⁄2 cup olive oil, 2 tbsps honey, 1 tbsp cumin, salt and pepper and whiz to combine, about 30 seconds.
Reserve 1⁄4 of the marinade and pour the rest into a freezer bag with 1 kg chicken thighs and refrigerate for 30 minutes up to overnight. Prepare a grill on medium high Grill the chicken for about 14 minutes, turning often.
Serve with lime wedges and additional coriander and drizzle the 1⁄4 cup reserved marinade before serving.
