Couscous & Broccoli Salad

Couscous and broccoli get a big boost of flavour in this recipe.

Ingredients

  • coarse salt and ground pepper
  • 200g couscous
  • 100g broccoli florets, blanched
  • 50g peas, blanched
  • 1 red pepper, finely chopped
  • 50g feta cheese
  • 2 tsps olive oil
  • 1 tbsp white-wine vinegar

Method

Step 1

In a saucepan, bring 300ml lightly salted water to a boil. Add the couscous, cover, and remove from heat. Let stand until tender, 5 minutes. Fluff with a fork and transfer to a bowl.

Step 2

Toss the broccoli, peas, pepper, feta, oil, and vinegar with the warm couscous. Season with salt and pepper. Can be served warm or cool.
