Cranberry & Coconut Granola Bars

  • 2 cups oats
  • 11⁄2 cups sliced almonds
  • 1⁄2 cup sunflower seeds
  • 1⁄2 cup honey
  • 1⁄4 cup dark brown sugar
  • 2 tbsps butter
  • 2 tsps vanilla essence
  • 1⁄2 tsp salt
  • 1⁄2 cup toasted wheat germ
  • 170g dried cranberries
  • 1 cup desiccated coconut


Step 1

Preheat the oven to 180°C. Grease a 22cm by 33cm baking tray and set aside.

Step 2

Spread the oats and almonds out on a baking sheet. Toast the oats, sunflower seeds and almonds in the oven for about 15 minutes, stirring once or twice. Remove from the oven and reduce the temperature to 150°C.

Step 3

Meanwhile, combine the honey, corn syrup, brown sugar, butter, vanilla essence, and salt in a small sauce pan. Heat over medium- low heat until the butter and brown sugar are melted.

Step 4

In a large mixing bowl, combine the wheat germ, cranberries, and coconut. Add the toasted oats, sunflower seeds and almonds. Pour the honey mixture into the bowl, and stir until all of the dry ingredients are coated in the honey mixture. Transfer to the prepared baking dish, spreading the mixture evenly and pressing down with your fingers.

Step 5

Bake for 25 minutes. Remove from the oven and cool completely. Cut into squares or bars, and enjoy.
