Cranberry Cookies

Soft, chewy cookies, studded with dried cranberries.


  • 1⁄2 cup butter, softened
  • 1 cup sugar
  • 1 egg
  • 1⁄4 cup milk
  • 21⁄2 cups plain flour
  • 3⁄4 tsp baking powder
  • 1⁄4 tsp salt
  • 1 cup dried cranberries
  • 1⁄2 cup macadamia nuts, finely chopped


Step 1

Heat the oven at 180°C. Line a cookie sheet with parchment paper. Set aside. In a large bowl, cream butter and sugar until light and fluffy.

Step 2

Beat in the egg and milk. Stir to combine. Scrape the sides of the mixing bowl with a spatula.

Step 3

Combine the flour with the baking powder and salt; gradually add to the creamed mixture and mix well. Stir in the cranberries and macadamias.

Step 4

With a big spoon, drop cookie dough on the prepared baking sheets. Bake for 12-15 minutes or until golden brown. Remove to wire racks to cool.
