Creamy Lemon & Garlic Chicken

  • 4 chicken breasts
  • salt and pepper to taste
  • 60g plain flour
  • 2 tbsps butter
  • 2 tbsps olive oil
  • 250ml chicken stock
  • 2 lemons
  • 4 cloves garlic, finely chopped
  • 180ml cream
  • 6 tbsps flat leaf parsley, chopped


Step 1

Heat the butter and oil in a large pan over medium high heat. Season each side of the chicken breasts with salt and pepper and dredge in the flour. Put the chicken breasts in the pan. Cook for about 3 minutes on each side, or until it is cooked throughout and no longer pink. Remove from the pan and set aside on a plate.

Step 2

Turn the heat to medium low. Add the stock, juice from both lemons, garlic and cream. Bring the sauce to a boil and return to medium low heat. Test the sauce and season with salt and pepper as needed. Allow the sauce to cook and bubble for about 3 minutes. Add in the parsley. Serve garnished with lemon slices and fresh parsley with rice or pasta.
