Creamy Sweet Potato Soup

Ingredients
- 2 tbsps cooking oil
- 1 onion, finely diced
- 1 tbsp Rajah Mild & Spicy Curry Powder
- 1 tsp Robertsons Garlic Salt
- 4 large sweet potatoes, peeled and cubed
- 2 potatoes, peeled and cubed
- 7 cups water
- 1 Knorrox Chilli Beef Stock Cube
- 2 tbsps Knorr Minestrone Soup
Method
Step 1
Heat oil in a frying pan and fry the onion until soft. Add the Rajah Mild & Spicy Curry Powder and Robertsons Garlic Salt.
Step 2
Fry for 1 minute to release the aroma and flavour. Add the sweet potatoes, potatoes, water and Knorrox Chilli Beef Stock Cube.
Step 3
Stir well and bring to the boil, then reduce the heat and allow to simmer for 30 minutes or until the vegetables are soft.
Step 4
Just before done, mix the Knorr Minestrone Soup with 4 tablespoons of water to make a smooth paste, then add it to the soup and allow to simmer for 5 minutes stirring continuously until it thickens.
Step 5
Remove the soup from the heat and mash until smooth with a potato masher. Serve with slices of thick crusty bread.
