Crispy Calamari

Ingredients
- 700g calamari rings
- 100g flour
- 50g semolina flour
- 1 tbsp freshly ground pepper
- 2 tbsps salt
- 1⁄2 tbsp paprika
- 1 tbsp oregano
- vegetable oil for frying
Method
Step 1
Clean the calamari and wash thoroughly. Place the calamari rings on a paper towel to remove any excess water.
Step 2
In a blender add the seasonings and pulse until smooth.
Step 3
In a large sandwich bag add the flour and seasonings. Place in the calamari and shake well to coat (you will need to do this in batches). Remove the calamari onto a plate, shaking of any excess flour.
Step 4
Into a medium sized frying pan, pour enough vegetable oil to deep fry the calamari. Heat the oil to medium high heat until it begins to bubble. Fry the calamari in batches for about 2-3 minutes, until golden brown.
Step 5
Remove the calamari using a slotted spoon and place on a paper towel to blot. Season and serve the calamari hot with a squeeze of lemon.
