Crispy Fish Goujons

  • 750g hake fillets, skin removed
  • 225g flour
  • 2 eggs, beaten
  • 500g fresh breadcrumbs
  • 125g Parmesan, grated
  • zest of 1 lemon
  • salt and freshly ground black pepper
  • cooking oil for deep frying
  • 1 egg yolk
  • 3 cloves garlic, finely chopped
  • juice of 1 lemon
  • salt and freshly ground black pepper
  • 250ml oil


Step 1

Cut the sh into bite sized cubes. Combine the breadcrumbs, parmesan, zest and seasoning. Coat with the our, dip in the egg and then the crumbs. Chill in the fridge for 15 minutes.

Step 2

Meanwhile prepare the aioli: Place the yolk, garlic, lemon juice and seasoning into a blender. Blitz together until well combined, then slowly add the oil through the funnel blending all the while until light in colour and thickened. Set aside.

Step 3

Heat a pot of cooking oil. When the oil is hot enough, fry the goujons until golden and crispy, about 4 minutes. Place on paper towel to absorb excess oil. Serve with garlic aioli.
