These mini cheese and tomato pizzas are fantastic to serve at a party or special celebration and can also be great for children.
Ingredients
- 500g Strong white bread flour
- ½tsp salt
- 7g instant yeast
- 2tsp caster sugar
- 325ml warm water
- FOR THE TOPPING
- 3tbsp tomato purée
- 1tbsp oregano
- 4 tomatoes, sliced thinly
- Cheddar cheese, grated
- Mozzarella cheese, sliced
- Basil, for garnish
Method
Step 1
For the dough, put the flour, yeast and salt into a large bowl and mix. Make a well. Mix the oil and water in a jug, then tip into the bowl to combine.
Step 2
Turn the dough onto a well-floured surface, flour your hands, then knead it very gently for about 2 mins until it is fairly even, soft and bouncy. Return the dough to the bowl, cover with oiled cling film, then let it rise in a warm place until doubled in size.
Step 3
When ready to cook, heat oven to 240°C Split the dough into 20 balls then roll into mini circles. Lift onto the floured baking tray. Smear over a thin layer of the tomato purée, a few slices of tomato, season, then add cheese. Finish with the oregano.
Step 4
Bake for 12 mins or until golden and crisp. Top with fresh basil and drizzle with olive oil to serve.
