What better way to start your day than with this delicious frittata!
- 8 eggs
- 1/4 cup(s) Parmesan cheese, grated
- 1 clove garlic, diced
- 1/2 teaspoon(s) dried basil leaves
- 1/4 teaspoon(s) salt
- 1/4 teaspoon(s) freshly ground black pepper
- 2 teaspoon(s) olive oil
- 1/2 bunch fresh spinach, stems removed, torn into bite-size pieces
- 2 tomatoes, thinly sliced
- 1 onion, finely chopped
- 1/4 cup(s) cheddar cheese,grated
Preheat oven to 200°C.
Beat eggs with a whisk or fork, stir in Parmesan cheese, garlic, basil, salt and pepper.
In an ovenproof nonstick pan, heat the olive oil over a medium-high heat and cook the green pepper and onions for 2 minutes. Add the spinach and cook for a further 2-3 minutes or until the spinach has started wilting. Lay the tomato slices on top of the spinach and pepper mixture; then pour over the egg mixture.
Cook over low heat, while lifting set edges of frittata with spatula and tilting pan to allow uncooked mixture to ow to bottom until eggs are almost set, about 5 minutes. Remove from heat, and then sprinkle with cheddar cheese. Bake for 8 minutes or until knife inserted in centre comes out clean.
