A delicious homemade recipe ideal for food gifts.
Ingredients
- Vegetable oil for greasing
- 900g granulated sugar
- 225ml whole milk
- 397g tin condensed milk
- 225g unsalted butter
- 2tbsp golden syrup
- 1tsp vanilla essence
Method
Step 1
Grease 23cm x 33cm Swiss roll tin or similar shallow tin with oil.
Step 2
Put the sugar and milk in a pan over a medium heat, stirring until the sugar has dissolved.
Step 3
Add the condensed milk and the butter, stirring until the butter has melted. Increase the heat and bring to the boil.
Step 4
Add the golden syrup and boil for about 15 minutes, stirring, until it reaches the soft ball stage (when dropped in cold water, a piece will form a soft ball), or 115°C on a sugar thermometer. Remove from the heat, then beat in the vanilla.
Step 5
Beat the fudge with a wooden spoon for about 10 minutes until it starts to thicken and set around the edges, then pour into the tin and leave to cool.
Step 6
Once cool, cut into 1.5cm squares with a sharp knife and store for later, or pack in tissue paper-lined boxes or in cellophane bags as gifts.
