Ingredients
- HUMMUS
- 1 x 400g can of chickpeas, rinsed and drained
- 1 lemon, juiced
- 1 tbsp of tahini
- 3 garlic cloves
- 1⁄2 tsp of salt
- 1⁄2 bunch coriander
- 3 tbsps fresh parsley
- 1⁄4 cup water
- FALAFEL
- 1 x 400g can chickpeas, rinsed and drained
- 3 cloves of garlic
- 1⁄4 cup coriander
- 1⁄4 cup parsley
- 4 mint leaves
- 1 onion, finely chopped
- 2 tbsps lemon juice
- 1 tsp cumin
- 1 tsp salt
- 1⁄2 tsp tumeric
- 1⁄2 tsp cayenne
- 1⁄2 tsp baking soda
- 1/3 cup flour
- WRAPS
- 6 tortillas
- 2 tomatoes, thinly sliced
- 1 red onion, thinly sliced
- Assorted lettuce leaves
- Salt and pepper, to taste
- Olive oil, for the dressing
Method
Step 1
To make the hummus: Put all of the ingredients in a food processor and blend until it reaches the desired consistency.
Step 2
To make the falafel: Add the chickpeas, garlic, onions and all the herbs and spices into a food processor and blend until fairly fine. Then add the baking soda and flour. Form into small ‘patties’. Heat oil in a pan with enough oil to submerge the patties about half way. Fry each patty for 3-4 minutes (until golden brown) on each side. Remove from the heat and pat with paper towels to absorb the oil.
Step 3
Once the hummus and falafel are ready; toss the tomatoes and onions in salt, pepper and olive oil.
Step 4
Place the tortilla on a flat surface. Place the lettuce leaves on the tortillas, next spread some hummus in the centre, then add the falafel. Top with tomatoes, onions, and fold into a wrap and serve immediately.
