Festive Plum Cake

  • 5 plums
  • 1 tsp cinnamon
  • 1 tbsp sugar
  • 125g butter, softened
  • 200g sugar
  • 2 eggs
  • 130g cake flour
  • 1 tsp baking powder
  • icing sugar to dust


Step 1

Pre-heat the oven to 180C. Grease and line a 20cm round cake tin.

Step 2

Halve and stone the plums, then slice. Sprinkle with sugar and cinnamon, set aside while preparing the batter.

Step 3

Beat the butter and sugar until pale and fluffy. Beat in the eggs one at a time until mixture is combined. Mix in the sifted cake flour and baking powder. Pour the batter into the prepared tin, arrange the plums over the mixture.

Step 4

Bake for 45-50 minutes. Dust with icing sugar and serve warm or cold with plain yoghurt or whipped cream.
