Stir up a fragrant beef curry to excite your taste buds and warm your soul.
Ingredients
- 900g beef, cubed
- 3 tbsps vegetable oil
- 2 onions, chopped
- 2 garlic cloves, chopped
- 2 cinnamon sticks
- 1 bay leaf
- 1/4 tsp red pepper flakes
- 375ml milk
- 3 tomatoes, quartered
- 3 tbsp chutney
- 3 tbsps fresh lemon juice
- 2 tbsps fresh ginger, finely chopped
- 11/2 tbsps curry powder
- 1/2 tsp salt
Method
Step 1
Sprinkle the beef with salt and pepper. Heat 2 tablespoons of oil in a large pot over high heat. Working in batches, add the beef to the pot and brown on all sides, about 7 minutes per batch. Using a slotted spoon, transfer to a plate.
Step 2
Heat the remaining 1 tablespoon oil in the same pot over medium-high heat. Add the onions and sauté until tender and brown, about 7 minutes. Return the beef to pot.
Step 3
Add the garlic, cinnamon sticks, bay leaf and dried red pepper to the pot; stir 1 minute. Stir in the milk, tomatoes, chutney, lemon juice, ginger, curry powder and 1/2 teaspoon salt and bring to boil. Reduce heat, cover and simmer until beef is tender, stirring occasionally, about 2 hours.
Step 4
Uncover and increase heat to medium. Boil the stew until juices are slightly thickened, about 10 minutes. Serve over rice.
