Sunny-side-up eggs, fresh avocado and toast for a fast, no-fuss meal. It’s a sure winner at breakfast, lunch, or dinner.
- 4 slices ciabatta loaf, toasted
- 4 eggs
- 1 avocado, sliced
- 1 tbsp olive oil
- 1⁄2 tsp paprika
- fresh chives, for garnish
Fry the eggs in olive oil until cooked to your desire.
Butter the toasted bread and place sliced avocado on top of each slice. Add the eggs on top of the avocado and sprinkle over the paprika. Garnish with fresh chives and serve.
