These beans make a hearty, sustaining breakfast or brunch.
- 600g haricot or cannellini beans
- 1 tbsp oil
- 2 onions, finely chopped
- 4 garlic cloves, finely chopped
- 500g chopped tomatoes
- 100g carrots, sliced
- salt and pepper to taste
- 1 tsp of smoked paprika
- 1/2 tsp of cumin
- 1/4 tsp of cayenne
- freshly parsley, chopped
Heat the oil in a large pan, add the onions, garlic and carrots. Cook for about 2 minutes. Stir in the chopped tomatoes and spices, then tip in the beans.
Reduce the heat to low and cook stirring occasionally, until you have a thick sauce and tender vegetables. Garnish with fresh parsley. Serve with fried eggs and fresh bread.
