- 6 very ripe peaches, stoned and cut into chunks (or strawberries or kiwis)
- 240ml tequila
- 120ml Cointreau
- 4 tbsps sugar syrup
- 4 limes, juiced
The day before serving, tip all the ingredients into a freezer proof box. Stir in 150ml water and freeze until you need it.
Put 8 glasses in the freezer for 20 minutes before you want to serve. To finish, tip everything into a liquidiser or food processor and whiz until smooth ( do this in batches if you need to).
Wet the rims of the glasses with water and then dip into the salt. Divide the margarita mix between the glasses and serve.
