Ingredients
- 4 tbsps fresh orange juice
- 3 tbsps sugar
- 1 tbsp orange zest
- 11⁄2 cup ground almonds
- 3⁄4 cup flour
- 11⁄4 tsp baking powder
- 1⁄2 cup butter
- 3⁄4 cup sugar
- 2 tsp vanilla essence
- 4 eggs
- 1 cup whipped cream
- 2 tbsp icing sugar
- 1 tsp vanilla essence
- 5-6 cups assorted fruit such as strawberries, raspberries, blackberries, peaches, cherries & kiwi
Method
Step 1
Preheat the oven to 180°C. Coat a 22cm non- stick flan pan with non-stick spray. Whisk almond, flour, salt and baking powder in a bowl. Beat the butter until creamy. Add the sugar and continue to beat until light and flu y. Add in the vanilla and the eggs one at a time, beating well after each addition. Add the flour mixture, stirring until just combined. Scrape the batter into the prepared pan. Bake for 20-25 minutes, or until the tooth- pick inserted comes out clean. Place the pan on a cooling rack and poke holes in the cake with a bamboo skewer.
Step 2
To make the syrup, heat the sugar, zest and orange juice in a small saucepan. Bring it to a simmer and cook until the sugar is dissolved. Brush half of the syrup over the cake. Cool the cake for 20 min- utes. Unmold onto a serving platter. Poke the top with a skewer and brush with the remaining syrup. Cool completely.
Step 3
Mix whipped cream, sugar and vanilla to the bowl and whisk on high speed until sti peaks form, about 1 minute. Spread the whipped cream evenly on top of the cake. Arrange the fruit on top, sprinkle with icing sugar and serve.
