Ingredients
- 2 eggs
- 1 teaspoon(s) castor sugar
- 1 teaspoon(s) vanilla extract
- 1/2 cup(s) milk
- Strawberry jam
- 1/2 cup(s) cake flour
- Fresh berries
- 1 tablespoon(s) butter, melted
- Honey for drizzling
Method
Step 1
Heat an non-stick frying pan over medium-high heat. Whisk eggs in a medium bowl. Whisk in milk, flour, butter, sugar and vanilla until no lumps remain. Pour 1/2 cup batter into the centre of the hot pan.
Step 2
Lift pan from burner. Quickly tilt to very thinly cover bottom. Return pan to burner and cook until top is set and edges begin to turn golden, about 30 sec.
Step 3
Loosen with a spatula and flip.
Step 4
Continue cooking 30 sec more. Transfer crepe to a plate. Cover with kitchen towel to keep warm.
Step 5
Repeat with remaining batter. Spread pancakes with smooth strawberry jam and roll up. Cut into halves. Drizzle with honey and top with a piece of fruit of your choice. Secure with toothpicks.
