Method
Step 1
Preheat a 325°F/170°C/Gas 3 oven. Grease 3-4 baking trays.
Step 2
Sift the flour, bicarbonate of soda and spices into a small bowl. Set aside. With an electric mixer, cream the butter or margarine and two-thirds of the sugar together.
Step 3
Stir in the egg, treacle and lemon juice. Add the flour mixture and mix in thoroughly with a wooden spoon to make a soft dough.
Step 4
Shape the dough into ¾ in (2cm) balls. Roll the balls in the remaining sugar and place about 2 in (5cm) apart on the baking trays.
Step 5
Bake until the biscuits are just firm to the touch,about 12 minutes. With a slotted spatula, transfer the biscuits to a wire rack and let cool.
