Ginger Carrot Salad

Ingredients
- 400g carrots, finely sliced lengthways
- 200g lentils
- 1 red onion, sliced
- fresh coriander, to garnish
- For the dressing:
- 1/2 onion, chopped
- 1 tbsps ginger, chopped
- 1/2 celery stalk, chopped
- 1 garlic clove, chopped
- 1/4 cup oil
- 21/2 tbsps rice vinegar
- 1 tbsp water
- 1 tbsp tomato sauce
- 2 tsps soy sauce
- 1 tsp lemon juice
- salt and pepper to taste
Method
Step 1
Place all dressing ingredients in a blender and blend until smooth.
Step 2
Combine the carrots, lentils and red onion and toss with the dressing. Serve in bowls garnished with fresh coriander.
