Ginger Carrot Salad

Ingredients

  • 400g carrots, finely sliced lengthways
  • 200g lentils
  • 1 red onion, sliced
  • fresh coriander, to garnish
  • For the dressing:
  • 1/2 onion, chopped
  • 1 tbsps ginger, chopped
  • 1/2 celery stalk, chopped
  • 1 garlic clove, chopped
  • 1/4 cup oil
  • 21/2 tbsps rice vinegar
  • 1 tbsp water
  • 1 tbsp tomato sauce
  • 2 tsps soy sauce
  • 1 tsp lemon juice
  • salt and pepper to taste

Method

Step 1

Place all dressing ingredients in a blender and blend until smooth.

Step 2

Combine the carrots, lentils and red onion and toss with the dressing. Serve in bowls garnished with fresh coriander.
