These delicious wraps can be enjoyed at any time. Wrap up your favourite ingredients such as grilled chicken, tomatoes, lettuce and avocado.
Ingredients
- 350g gluten free flour
- 350ml boiling water
- 2 tbsp vegetable oil
- 1 sachet yeast
- 1 tsp xanthan gum
- 1⁄2 tsp salt
Method
Step 1
Place 225g of the gluten free flour into a medium bowl, pour over the boiling water, add the oil and mix to a paste. Leave for 2–3 minutes before adding the remaining gluten free flour and other ingredients.
Step 2
Stir with a fork and then by hand and bring together to form a ball of dough.
Step 3
Knead on a work surface lightly dusted with gluten free flour. Divide into 6 pieces.
Step 4
Roll out each piece on a 25–26cm cut out circle of baking parchment paper. Pre-heat a heavy based non-stick fry pan. Place one wrap at a time still resting on the baking parchment paper into the pan, dough side down. Cook over a gentle heat for 2 minutes until the dough just starts to brown on the underside. Remove paper and turn over using a spatula, cook until the underside also starts to gently brown.
Step 5
Continue until all wraps are made. Fill as required or wrap and store for up to 3 days in an airtight bag. Refresh by sprinkling with a little water, wrap loosely in kitchen paper and heat for 10 seconds in the microwave before serving.
