Greek Stuffed Butternut

  • 1 butternut, halved and deseeded
  • 230g couscous, cooked
  • 2 onions, chopped
  • 1 red pepper, chopped
  • 100g feta cheese
  • 3 tbsps olive oil
  • handful of mixed herbs
  • pinch of cumin
  • pinch of coriander
  • salt and pepper to taste


Step 1

Preheat your oven to 200°C. Score the butternut from all sides with fork. Put both halves on baking tray and drizzle with olive oil, season with salt and pepper. Bake for about 35 minutes until soft.

Step 2

Heat two tablespoons of olive oil in a frying pan on low heat. Add the onions and stir them occasionally until nice and brown.

Step 3

Mix together the couscous, red pepper, caramelized onions, salt, pepper, cumin and coriander. Chop herbs and add them to the bowl. Fill butternut halves with the couscous mixture. Top with crumbled feta, place in the oven and bake for 4 minutes under the grill. Remove from the oven and top with extra feta and serve.
