Green Beans with Pine Nuts and Parmesan

Ingredients

  • 4 cups whole green beans
  • 2 tablespoons butter
  • 1 small clove garlic, finely chopped
  • 1 tablespoon pine nuts
  • 50g Parmesan cheese, shaved
  • Mint, for garnish (optional)

Method

Step 1

Cook green beans in salted water for 4 minutes. Meanwhile, in a small saucepan, melt butter over medium- low heat. Add garlic; cook 2 to 3 minutes, stirring frequently, until garlic is tender. Pour garlic butter over cooked green beans; stir to coat. Sprinkle with cheese and pine nuts. Stir gently and serve with some fresh mint.
