Ingredients
- 150g peas, fresh or frozen (thawed)
- 150g chickpeas
- 1 onion, chopped
- 1-2 cloves garlic, peeled
- 2 tbsps flour
- 1/2 tsp baking powder
- 1 tbsp fresh mint
- 1 tbsp parsley
- 1 tbsp lemon juice
- 1 tsp ground cumin
- 1 tsp flaky sea salt
- 1-2 tbsps olive oil
- To serve
- 200g beetroot hummus
- 4 carrots, peeled and cut into sticks
- 1 avocado, halved
- 2 green or red tomatoes, quartered
- 2 handfuls micro greens
Method
Step 1
Preheat the oven to 200°C. Add all falafel ingredients (except the oil) to a food processor and pulse until mixed. With moist hands, shape 10 patties. Pour a little olive oil into the palm of your hand and smooth out each falafel, coating it in oil. Place patties on a baking tray covered with baking paper. Bake in the oven for 20 minutes, turning them after half the time.
Step 2
Arrange quinoa, tomatoes, carrots, avocado, beetroot hummus in a bowl. Top with micro greens and sesame seeds. Serve with a yoghurt dressing.
