Grilled Aubergines with Pesto Pine Nuts

Step 1

Wash and slice the eggplant, brush the slices with olive oil. Grill and set aside.

Step 2

Rub slices of bread with garlic and brush with Olive Oil. Grill till golden.

Step 3

Assemble, spread each slice of bread with some of the pesto and top with eggplant. Sprinkle with a tiny bit of salt, the toasted pine nuts, chopped parsley and a drizzle of olive oil.
