Grilled Cabbage with Bacon & Sour Cream2017-08-29

- 6 slices streaky bacon
- 3 tbsps barbecue marinade
- 3 tbsps olive oil
- 2 tbsps cider vinegar
- 2 tbsps maple syrup
- 1 cabbage cut into wedges
- 150ml sour cream
- 3 tbsps chives, finely chopped
Cook the bacon in a large pan on medium heat until crisp. Reserve 1 tablespoon of the drippings. Chop the bacon and set aside.
Mix the marinade, olive oil, vinegar, maple syrup and reserved bacon drippings in small bowl until well blended. Marinade the cabbage wedges in the mixture and refrigerate for 30 minutes or more. Remove the cabbage and reserve any leftover marinade.
Grill the cabbage over medium heat for 7 to 8 minutes per side or until tender-crisp, brushing with leftover marinade. Serve, topped with the sour cream, chopped bacon and chives.
