Grilled Chicken Skewers2016-08-24

- 6 chicken breasts, cut in long strips
- 1⁄2 cup orange juice, freshly squeezed
- 1⁄4 cup lime juice, freshly squeezed
- 2 tbsps olive oil
- 2 tbsps chilli powder
- 3 cloves garlic, chopped
- salt and freshly ground black pepper
Skewer each half chicken breast on wooden skewers soaked in water. Place the chicken in a large shallow baking dish. Whisk together the orange juice, lime juice, olive oil, chilli powder, and garlic. Pour over the chicken and marinate in the refrigerator for 1 to 4 hours.
Prepare a charcoal grill to high heat. Remove the chicken from the marinade and sprinkle with salt and pepper on both sides. Place the chicken directly over the coals and cook until each side becomes golden brown and slightly charred, about 4 minutes per side. Cook for another few minutes until tender. Remove from the grill and let rest for 5 minutes.
