Grilled Chicken Tacos2018-08-23

These chicken tacos are perfect for outdoor entertaining. Try grilling the tortillas for extra flavour.
- 400g chicken breasts
- salt and freshly ground pepper to taste
- 1/2 tsp paprika
- 1/2 thyme to taste
- olive oil
- 1 red onion, sliced
- 25g lettuce
- 1 celery stick, sliced
- 50g cherry tomatoes, sliced
- 1 lime
Season the chicken with salt, pepper, paprika and thyme. Massage the spices into the meat and cover evenly. Add a tablespoon of olive oil and spread across the meat, covering it evenly. Set aside to rest in an airtight container for an hour or overnight.
Preheat the grill. When hot, place the chicken on the grill and cook on medium for about 8 minutes, then turn and cook on the other side for an additional couple of minutes, until the meat is cooked through. Remove chicken from grill and set aside to rest. Warm tortillas on the grill for a minute on each side.
Cut the chicken into small pieces or slices. Place some lettuce on a tortilla, add the grilled chicken, red onion, celery and tomato. Repeat and serve with a lime wedge.
