Healthy and flavourful. This grilled chicken and rainbow veggies is tender & juicy and ready in 15 minutes.
Ingredients
- 1 kg mixed chicken portions
- 2 tbsps olive oil
- 1 tbsp mixed herbs
- salt & freshly ground black pepper
- 1 red pepper, sliced
- 1 yellow pepper, sliced
- 3 baby marrows, sliced
- olive oil
Method
Step 1
Marinate the chicken portions for up to 2 hours in a mixture of lemon juice, olive oil, herbs, salt and pepper.
Step 2
Place the chicken on a heated grill with some sliced vegetables such as yellow and red peppers and baby marrows. Brush and season the vegetables with a with a dash of olive oil, salt and coarse black pepper. Cook everything on a grill for 30-35 minutes until the chicken is cooked through.
