Sweat and Savoury Grilled Citrus Chicken.
- 3 Cloves garlic, crushed
- 1 tablespoon(s) Finely chopped fresh oregano
- 1/4 cup(s) Lemon Juice
- 1/2 cup(s) Orange marmalade
- 2 Fresh small red Thai chillies, chopped finely
- 4 Chicken Breast Fillets
- 2 cup(s) Chicken Stock
- 2 cup(s) Couscous
- 2 Green Onions, sliced thinly
- 1/3 cup(s) Roasted unsalted pistachios, chopped coarsely
Preheat oven to 200°C. Oil oven tray; line with baking paper.
Combine garlic, oregano, juice, marmalade and chilli in medium bowl with chicken. Marinade for 10 minutes.
Drain chicken; reserve marmalade mixture. Cook chicken on oiled grill plate (or grill or braai) until browned both sides. Place chicken on tray, drizzle with reserved marmalade mixture; bake in oven, about 10 minutes or until chicken is cooked through.
Meanwhile, bring stock to the boil in medium saucepan. Combine couscous with the stock in large heat proof bowl, cover; stand about 5 minutes or until liquid is absorbed, fluffing with fork occasionally. Segment oranges over couscous; stir in onion and nuts.
Serve couscous topped with chicken.
