Ingredients
- 4 lamb chops
- 1⁄2 tbsp olive oil
- 1 tbsp fresh rosemary, chopped
- 1⁄2 tsp ground coriander
- 1⁄2 tsp salt
- 1⁄2 tsp freshly ground black pepper
- 1 garlic clove, finely chopped
- MINT CHIMICHURRI
- 1⁄2 cup fresh mint leaves, finely chopped
- 1⁄3 cup olive oil
- 1⁄4 cup fresh parsley, finely chopped
- 3 tbsps red wine vinegar
- 1⁄2 tsp ground cumin
- salt & freshly ground black pepper
- 1 garlic clove, finely chopped
Method
Step 1
Preheat grill to medium-high heat (180°C). Place lamb chops in a large bowl, and drizzle with olive oil. Sprinkle with rosemary and the next 4 ingredients, and toss well to coat. Let stand for 30 minutes.
Step 2
To make the mint chimuchurri, combine mint leaves, olive oil, parsley, red wine vinegar, salt, cumin, pepper, and garlic in a bowl, and stir well.
Step 3
Place chops on greased grill rack. Cover and grill 3 to 4 minutes on each side for medium-rare (145°), 8 minutes for medium (160°), or 10 minutes for well done (170°). Remove from grill; let stand 5 minutes. Serve with mint chimichurri and salad.
