Grilled Nectarine & Proscuitto Salad

  • 4 nectarines, sliced
  • 1 tbsp balsamic vinegar
  • rocket leaves
  • prosciutto ham
  • mozzarella
  • Dressing:
  • 3 tbsps olive oil
  • lemon juice and zest from 1⁄2 lemon
  • 1 tsp honey
  • salt and pepper, to taste


Step 1

Heat your grill to medium heat. Slice 4 nectarines and brush with olive oil, and place on the grill flesh side down. Grill on each side for 2-3 minutes, until you’ve got nice grill marks and the nectarines have softened. Place nectarines in a bowl and toss with 1 tbsp balsamic vinegar and some olive oil. Let them rest and cool for 10 minutes.

Step 2

Remove the nectarines to another bowl, and make the dressing in the bowl with their juices. Whisk in 3 tbsps olive oil, lemon juice and zest from 1⁄2 lemon, 1 tsp honey, and salt and pepper.

Step 3

To serve, arrange some rocket leaves, then top with some prosciutto, mozzarella and the grilled nectarines. Drizzle over the dressing.
