Grilled Pear & Blue Cheese Salad2015-12-04

A delicious contrast between sweet grilled fruit with salty robust blue cheese and a raspberry vinaigrette.
- 3 ripe pears, cut into 11⁄2 cm thick wedges
- 1⁄4 cup red wine vinegar
- 3⁄4 cup raspberry preserves
- 2 tbsps fresh basil
- 1 garlic clove, pressed
- 1⁄2 tsp salt
- 1⁄2 tsp freshly ground pepper
- 1⁄3 cup oil
- 1 cup mixed salad greens
- 1⁄2 red onion, thinly sliced
- 1 cup pomegranate arils (seeds)
- 3⁄4 cup roasted cashews
- 1⁄2 cup blue cheese
Preheat grill to 180°C. Grill pear wedges for 1 to 2 minutes on each side or until golden.
Whisk together red wine vinegar, raspberry preserves, basil, garlic, salt and pepper in a small bowl. Add canola oil in a slow, steady stream, whisking constantly until smooth.
Combine salad greens, onion, pomegran- ate seeds, cashews, blue cheese and pears in a large bowl. Drizzle with desired amount of vinaigrette, and toss to combine.
