Grilled Prawn and Strawberry Salad

Ingredients

  • SERVES: 6
  • 500g prawns tails intact
  • 400g strawberries, halved
  • 1 orange, sliced
  • 400g green olives
  • 2 bunches fresh rocket
  • Dressing:
  • 1 tsp lemon zest
  • 4 tbsps lemon juice
  • 2 tsp sugar
  • 1 tsp Dijon mustard
  • 1⁄2 tsp sea salt
  • 6 tbsps olive oil
  • Freshly ground black pepper to taste

Method

Step 1

Preheat the grill to 180°C. Grill the prawns for 3-5 minutes on each side. Add the strawberries and orange slices and grill for another 3 minutes.

Step 2

Add the prawns, strawberries and orange slices to a bowl and toss with the rocket and olives.

Step 3

In a small bowl, whisk together the lemon zest, lemon juice, sugar, mustard, and fine sea salt, whisking until the sugar and salt are dissolved. Add the oil in a slow stream, whisking constantly until the dressing is well blended. Season with freshly ground black pepper.

Step 4

Drizzle the dressing over the salad and serve.
