- 500g prawns, peeled
- 2 tsps olive oil
- 1 garlic clove, finely chopped
- 2 tsps fresh lime juice
- 1 avocado, mashed
- 4 bread rolls, split, toasted
- 100g pea shoots
- 1 red onion, thinly sliced
- 2 tsps balsamic reduction
Combine the prawns, oil, lime juice and garlic in a medium bowl. Season. Heat a grill or chargrill on high. Cook the prawns for 2 minutes each side or until cooked though.
Serve the prawns in the bread rolls with avo smash, onion, pea shoots and drizzle with balsamic reduction.
