Grilled Rib Eye with Mango Chutney

Nothing beats this juicy marinated steak with a chilli mango chutney.
Ingredients
- 4 rib eye steaks
- cooking oil
- salt and freshly ground black pepper
- For the mango chutney
- 200g brown sugar
- 250ml apple cider vinegar
- 990g mangoes, peeled and chopped
- 1 red onion, chopped
- 75g raisins
- 1 clove garlic, finely chopped
- 1 tbsp fresh ginger, finely chopped
- 3 tbsps vegetable oil
- 2 red peppers, chopped
- 1 tsp chilli flakes
Method
Step 1
To make the chutney, heat the oil in a medium frying pan. Add the chilli flakes and cook for one minute. Add the onions and cook until soft. Be very careful not to burn the chilli, so keep stirring. Stir in the ginger and red pepper. Sauté for 2 minutes before adding the mango and cooking for an additional minute or two.
Step 2
Pour the vinegar and sugar into the pan and stir. Simmer for 30 minutes, stirring. Add the raisins and season with salt and pepper. Allow the chutney to cool and store in the fridge for up to two weeks.
Step 3
For the steaks, prepare the braai. Brush the steaks with oil and sprinkle with salt and pepper on both sides. Grill until brown and slightly charred, 4 to 5 minutes. Flip the steaks and continue grilling 5 to 6 minutes longer. Remove from the braai and let rest 5 minutes. Serve with mango chutney and garnished with chopped parsley.
